A wok is a traditional utensil used in China however has become a popular addition to commercial kitchens around the world thanks to the versatile and durable nature of the equipment.
In its simplest form, woks consist of a metal, cast iron or carbon steel bowl which is set atop a gas burner. Woks are designed for use with high intensity heat and are available with either non-stick surfaces or as traditional steel models.
Non-stick woks offer the benefit of not requiring as much oil and can be washed after every use if necessary making them ideal for kitchens that work with a variety of cuisines. Steel woks need initial seasoning prior to the cooking debut and aren't washed between uses. Repeated use will help to generate a patina or surface layer which adds a depth of flavour to dishes as they are quickly stir-fried.
All options have strong, durable handles capable of supporting the weight of the wok even when filled with ingredients however some also have a second smaller handle for added security when lifting heavy pans.
