Caring for your copper cookware

Not only does copper pots and pans look magnificent,
it performs superbly in commercial kitchens.
Delivering excellent thermal conductivity and even
heat distribution, high temperatures aren’t always
necessary to achieve perfection.
Here we give you some basic care tips to maximise
the lifespan of your copper cookware!

As copper products are expensive, learning how to correctly care for your kitchen items will guarantee that your investment stands the test of time.
Many copper pans are lined with tin or steel; a stainless steel lining being more durable (more costly) alternative.
When cleaning, it is vital to avoid damaging this layer - any exposed copper beneath will react with alkaline or acidic foods. This can produce a metallic taste and discolouration of foods.

Do’s

  • Carefully hand wash pans using warm water and mild soap.
  • Thoroughly hand dry immediately after washing as any residual water can cause spotting and tarnishing.
  • Use a soft cloth to protect the lining and prevent any scratches.
  • Only use soft or wood utensils to prevent scratches to the inner lining.

Don’ts

  • Never put your pots and pans in the dishwasher. Copper doesn’t cope well with high temperatures.
  • Don’t scour stubborn stains or use abrasive cleaning tools as it will cause damage to the inner core.
  • When faced with tough burnt on food, soaking is preferable to scrubbing. Be sure to dry thoroughly afterwards.

Top Tip: If you notice the exterior of your copper pans looking a little tarnished, don’t panic! Try using half a lemon with a little table salt sprinkled on the cut side. Rub marked areas gently, rinse with warm water, wipe with a soft cloth and hand dry.

Learning the most appropriate ways to clean and care for your copper pots and pans will ensure that your investment lasts, and your kitchen is always capable of producing professional dishes.
