Basic care for your aluminium cookware

 

Aluminium cookware is a favourite in many commercial kitchens due to its impressive heat conducting properties and the fact that products are lightweight and affordable. Despite these positives, aluminium pots and pans are often less durable than the alternatives and can react with certain foods compromising colour and flavour. The non-stick coating present on many pieces can scratch easily making these products more delicate.

 

Extend the life of your cookware and maximise your investment by giving it the appropriate care it deserves.

Do's

  • Wait until the pots and pans are completely cool before placing in the water. Hot pieces may warp if they are cleaned whilst still hot.
  • Warm water, mild detergent and a soft cloth should be sufficient to clean the majority of dirt and grime.
  • A mixture of either four tablespoons of white vinegar or white tartar and a quart of water can be used to brighten any dull aluminium.

Don’ts

  • Never wash in the dishwasher regardless of how busy the kitchen is.
  • Don’t use metal cooking utensils with aluminium pans, they cause scratches and reduce the non-stick capacities of the pans. Try to use either wooden or plastic alternatives.
  • When washing never leave the pots and pans to soak in soapy water. The non-stick layer will absorb the cleaning detergent and make subsequent foods cooked in the pots taste of soap.
  • Steer clear of scrubbing pads or other abrasive cleaning products. These items will compromise the non-stick coating and reduce the efficiency of the cookware. If you find a stubborn patch of baked on food, don't be tempted to scrub or leave to soak. Instead, make a mixture of baking soda and water formed into a paste to remove any tough to clean areas.

Top Tip; Try to avoid cooking highly acidic ingredients in aluminium pots and pans as the acid will stain your cookware and cause pitting to occur over extended periods. Obviously this may be difficult if you only have aluminium cookware so wherever possible choose alternative more heavy duty materials when preparing high acidity foods.
